Healthy breakfast omelette recipe

A great heart warming breakfast, really sets you off to a good start of the day. An omelette, with a side of spinach, avocado and lemon to squeeze on top. This is a great way to start the day because of the healthy fats, protein and the vitamin c from the lemon. It will fill you up and keep you full for longer.


Basic omelette:

3 small eggs

A handful of spinach

4 mushrooms

On the side:

1 avocado

1 lemon (if desired)



Start washing the vegetables carefully to make sure no dirt is left on. Then cut the mushrooms in slices and put it on the pan with a dash of olive oil. When it has cooked for 4 minutes, add the spinach. While it’s cooking, bring the 3 eggs into a bowl, and stir it around until the egg yolk runs. Add salt and pepper for seasoning as desired.

Now pore the eggs on top of the veggies on the pan, and let it cook on low heat for about 8 minutes.

While the omelette is cooking, prepare the avocado and lemon. Now get the omelette off the pan, and bring it all together. Enjoy your nutrient dense breakfast.
